Had a pair in my workshop for years and they stayed so sharp I got a second pair for the kitchen. They work better I think, and I throw them in the dishwasher.

Yup. These. We have 4 pairs of shears and these are the only ones I use on poultry.

The Fiskars hand pruners work good also. $15. and up. Lowes, Home Depot and Amazon.

I'm surprised nobody said using long handled tin snips. Bulky, but cut they through anything.

We've had these for many years, they work good for chicken and OK for spatchcocking turkey.

Have a pair of Cutco shears work great most anything.

I had a pair, but I found it easier to spatchcock a chicken following a demonstration by a butcher on YouTube simply using a knife. I didn’t have a need for a pair beyond spatchocking a chicken.

If it was the YouTube I saw he used cheap-O knives.
