I went with the one that Aaron Franklin recommends in his book: The Dexter-Russell 12 inch scalloped slicer.Product Description

Franklin now sells what looks like a Franklin-branded version of this knife on his website for about $10 more than the Amazon link I provided.
I've used the Dexter-Russell brisket knife for over 6 years and it's still incredibly sharp. I use it on lots of things, not just brisket.

I have a Mercer slicing knife similar to what Kathryn recommends but with a black handle. I picked it up on Amazon and have liked it. Amazon lists it as being made in USA.

That is cool....I did not realize they were actually manufactured in the United States, Massachusetts to be exact.
I really like my Dexter-Russel knives. Love the slicer (I have both, the serrated and non-serrated ones. Serrated one preserves bark better). My favorite is their filet knife. I also find their hand-held knife sharpener to be good enough for home cooking and very convenient.
Those knives clearly show that one does not need to spend hundreds of dollars on expensive knives, although such knives do look incredibly cool, are wicked sharp, and I am sure have a great feel in the hand.
But, for me, I'll leave the Shun's to the YouTubers.
(Have you noticed that? When a content creator nears 1 million subscribers, suddenly they are using Shun knives -- with the complete knife block in the background, of course. Then, about eight months later, they simply disappear never to be seen again, ostensibly as the sponsorship ends. Shun knives are, of course, excellent, I just find how they come and go with popular YouTubers hilarious.)
