I went with the one that Aaron Franklin recommends in his book: The Dexter-Russell 12 inch scalloped slicer.Click image for larger version Name:	91gDGy9HWfL._SL1500_.jpg Views:	0 Size:	718.0 KB ID:	1353751
      Product Description

The Sani-Safe product line offers the foremost standard for professional cutlery. A textured, slip-resistant, easy-to-clean polypropylene handle withstands both high and low temperatures. An impervious blade-to-handle seal provides the utmost sanitary performance. Dexter scalloped blades are manufactured from proprietary DEXSTEEL stain-free, high-carbon steel and are individually ground to create specially designed scallops forming multiple sharp cutting edges. The points of the scallops easily break through tough rinds and pierce the firm skin of fruits and vegetables and also protect the sharp cutting edges. After breaking through the tough outer surface, the curved scalloped edges slice through soft interiors without damaging them. Made in USA. Items marked with the NSF logo are NSF Certified.

Franklin now sells what looks like a Franklin-branded version of this knife on his website for about $10 more than the Amazon link I provided.

I've used the Dexter-Russell brisket knife for over 6 years and it's still incredibly sharp. I use it on lots of things, not just brisket.

Hope this helps, and welcome to The Pit!

      Kathryn

I've had the Dexter Russell for more than 30 years. It's a great tool at a great price.

Welcome from the Land of Enchantment!

I have a Mercer slicing knife similar to what Kathryn recommends but with a black handle. I picked it up on Amazon and have liked it. Amazon lists it as being made in USA.

I too have a Mercer and really like it. Unfortunately for your purposes, the Mercer website lists the country of origin as Taiwan.

By the way, welcome to the Pit from the Florida Suncoast.

Yours and barelfly ‘s appear to be from different series. Yours is the Renaissance series, his is the Millennial series. So, if USA is a requirement, check the fine print!

When all is said and done, Victorinox is top-of-the-line at a very reasonable price. Their $50 compares to others' $300 knives.
And yes, I know they're from Sweeden.

              Hello from NW Oregon.

Welcome from St. Cloud, FL. I also use the Victorinox slicer, works well and the price is budget friendly. My wife has found she can use it for any slicing needs and especially likes slicing tomatoes with it.

That is cool....I did not realize they were actually manufactured in the United States, Massachusetts to be exact.

I really like my Dexter-Russel knives. Love the slicer (I have both, the serrated and non-serrated ones. Serrated one preserves bark better). My favorite is their filet knife. I also find their hand-held knife sharpener to be good enough for home cooking and very convenient.

Those knives clearly show that one does not need to spend hundreds of dollars on expensive knives, although such knives do look incredibly cool, are wicked sharp, and I am sure have a great feel in the hand.

But, for me, I'll leave the Shun's to the YouTubers.

(Have you noticed that? When a content creator nears 1 million subscribers, suddenly they are using Shun knives -- with the complete knife block in the background, of course. Then, about eight months later, they simply disappear never to be seen again, ostensibly as the sponsorship ends. Shun knives are, of course, excellent, I just find how they come and go with popular YouTubers hilarious.)

I have a knife I bought from Malcom Reed and his site "How to BBQ Right." It is a Dexter and on the blade it says it is made in the USA. It is a good knife, does a good job, and wasn't expensive.

That is exactly how I got introduced to the Dexter brand!

I have 3 carving knives. An antique silver set more for show, a dalstrong shogun, and the Dexter Russell pictured above that stays in my catering knife roll. The dexter does everything the others do at a fraction of the cost. Mine is the non serrated version.
