    New Dalstrong Boning Knife

    Received this as a gift from a friend. Dalstrong Centurion 6-inch boning knife. Not sure it's something I would have picked out on my own, but this thing is nice. Happy to add it to my growing collection of cutlery. Now to get a hunk of meat that needs trimming!

      If that's the case, I think he bought the wrong knife, unfortunately. This is a boning knife, not a deboning knife.

    I'm so damn hard on my boning knives with all the wild game that I use cheap dexter Russell ones.

      I know a few professional chefs and butchers, most of them use cheap knives with good blades. I have a friend who owns a butcher shop (https://www.morgansbutchershop.com/), and he doesn’t own any of his knives, he uses a rental service! Once a week they come in with sharp knives, and take the old ones. The way he explained it made perfect sense for him.

      Same! I’ve always used Dexter Russell knives. This one is hanging next to my current Dexter on the knife strip. I’ll need to decide if I want to use the Dalstrong the same way.

      I have one of those Dexter boning knifes too. Most of my knives are from Mercer, which also makes a decent, reasonably priced product.

    I have a new Quantum series Dalstrong boning knife I just got and trimmed my first brisket with it Saturday. Up until now I have been using a Dexter Rusell knife that has been great. I sharpen it before I trim my briskets and it stays sharp enough between those. The Dalstrong was super sharp out of the box and I would probably say I like it a better than the Dexter knife. Not 100% sold on how the handle feels but it isn't bad at all. Much thinner handle than the Dexter for sure. Not sure if it is necessarily 3x better based on cost but I was pleased with it.

    I picked this up from OKJ (Amazon).

    Nothing fancy or expensive. Definitely something I will be using. We'll see if it keeps an edge or worse, rust...
