So far not impressed with my Misen 8 inch chef’s knife. Looks really pretty out of the box, but it already has water spots on the blade, and it also has a nick in it. It has never been in the dishwasher, always washed and dried by hand. The steel seems a bit on the brittle side. It’s too bad, because it has good balance and feels nice in your hand.

They are carbon steel. I found that out when I contacted them about the stains that started to show on my Misen. They called that normal patina, which I easily removed with some Barkeepers. Otherwise, it has a great chefs knife and holds its edge well.

Yeah, then any water left to dry will stain like that. It'e very hard to keep unclad carbon from getting a patina.
The chip is odd though - they're only hardened to 58HRC according to their site so it shouldn't be brittle. Very hard carbon can be brittle depending on the heat treatment and alloy as I understand it.

I've heard that there were a few issues in the past, hate to see more. I got mine via their Kickstarter and bought three - one for me and two gifts. So far no problems, mine has one small spot but I've left it in the sink wet several times and it went through the dish washer once (politely lectured my guest about this) and that is the only blemish. The people that I gave the other two to like them alot. It is one of my go-to knives.
I hope Misen resolves your problem satisfactorily.

I did the same, though I couldn't get a good edge on them with normal honing. Gave 2 of them away and one was stolen at work, but the last one I had did REALLY good after meeting my worksharp sharpener. I'd buy one again, I really liked the balance of a German style knife mixed slightly with a Japanese knife.
