I’ve been using a Chefschoice model 120+ for as long as I can remember, think it only does 20° and serrated too. It sharpens my Henckels professional "s" knives nice but any comment beyond that is above my pay grade. My wife thinks they get too sharp. 😳

I have the Worksharp E5. Love it. Very easy to use and makes for a very sharp edge. I keep it on the counter right next to the knife block plugged in and ready to go so I remember to use it often.

I also have the WorkSharp E5 with the East West kit. I think it works very well and is easy to use. I can line up a few knives and work each through a belt, then swap to the next belt and repeat, sharpening 5-8 knives in 20-30 minutes.

One thing to remember is that the electric sharpeners WILL sharpen a knife. There is a trade off of excess material removal. If your knives are cheaper (sub $100) this may be a reasonable compromise when your time is considered. I buy knives as a lifetime investment and them lasting for my children matters to me. My original post was more toward best practices than "nothing but this will work".
