I put my wireless probe at the grate level as I want to know the temp my meat is cooking at. I will have my wireless probe reading between 25-60 degrees hotter than the dome mounted Primo thermometer. Is that normal and which one should I be watching. Doing a Pork Shoulder right now and it’ll be at least an 8 hour cook. But a huge disparity between the two gauges this morning. Wireless at 240 and Primo dome at 190 degrees.

Usually hotter at the done. You can check your wireless one in boiling water 210ish and in a glass full of ice and water 32ish.
