I want to chime in not about the choices, but the why. I monitor ambient temperature - usually only locally with a single display / single probe. I monitor meat IT, and I like to see it locally and have a remote. I rarely cook more than two meats in my Weber 22.5 - so I think with an 18 you can get by with a two probe temp setup and a remote.
MCS will soon take over, your 18 will be a fond memory and an occasional cooker, and you'll need a fireboard for your new grill. I'm careful to not get more than I need for any one of my grills, but ready to get what I need for the next one. I will always use what I upgraded again, and need to leave the tech with the cooker so I can.
