I have a ThermoWorks DOT, which I was using this past weekend. I was using the pit probe, which has seemingly served me well for a bit less than a year. But this time I was seeing these crazy swings... just standing there I could watch it swing 10-15 degrees in the space of 30 seconds. There was nothing abnormal about the cooking situation. I was using the PBC, with the probe threaded through the rebar hole, and hanging into the middle of the barrel. I've never seen this behavior. Is this a known symptom of a misbehaving probe, or some other failure of the thermometer?

It can be but 10 to 15 degrees in 30 seconds isn't that bad in my head. Could be a kink or pinch in the probe wire possibly. I had the probe on my RecTec pinched when it was new and it would fluctuate but much more wildly than you are seeing. I would see 100+ up and down in seconds.
Could also try hot water and ice bath to test it. Sure there are notes on that somewhere here or on Thermoeorks site to use as a test.
