I'm sure you've thought of this but make sure your sensors aren't right in the cold air blowing into the 'frig/freezer.
That will make it seem like the fluctuations are worse than they really are.
If your sensors are small and have very little thermal mass, you can put a small alligator clip on them.
Just something to increase the mass a little.
I added some 3-d printed probe holders, but those are small and light plastic - not going to help much. I will look at where the air influx is compared to my sensor for sure. Never paid attention. I think I may end up doing 2 sensors per fridge, just to get a better idea of any differences from top to bottom of the volume of space. Just one in the freezers though, it's not that critical.
