I've been using a Combustion Thermometer for a year now, or I should say a couple of their probes. My first probe was eventually replaced when the ambient temperature element provided incorrect readings. The company was quick to replace it, and, in fact, allowed me to upgrade to their new model, capable of withstanding much higher temperatures (shown below) for a very reasonable cost. I've been using the latest model for about four months and it's worked well as a thermometer probe for steaks, chicken, and pork on my M-16 charcoal grill, Yoder pellet grill, and BGE. Using it on a rotisserie chicken is like magic with no entangled wires!
It's been subjected to flaming high temperatures close to 1000 degreesF and comes out unscathed. It sends an alarm via the app when it reaches that range and you need to remove it from the grill. It remotely connects to the WiFi Display that I leave on a nearby table. The display unit, in turn, transmits the readings to the app on my iPhone wherever I am in my home. Connectivity has worked flawlessly. As soon as I turn the unit on, the app shows it's connected.
The app also sends an alert when the battery is low on the probe. That led to another issue I experienced. I often found when I went to do a cook, the probe battery was dead, even though it was charged after the last use. It happened several times, so I called the company. Apparently some of the cradles had a defective spring tip which caused the probe to pop out from its nest. We tested my troubled unit by inserting the probe and lightly jostling the unit, and the probe's end moved up slightly from the end with the contact. Once the probe loses contact it turns on and runs down the battery over time. They told me they' would send me a new cradle immediately along with a return label to return the defective one. The replacement unit has worked fine. Customer support is very knowledgeable and they stand behind their product.
My overall experience using the Combustion probe for cooking has been terrific. It's measurments are very accurate and it's capability to predict the end of the cook is remarkable. I've used it in steaks most often and it's uncanny how close it comes to predicting when it will reach the set point, usually 130oF. Even after I've seared and then do indirect cooking, it gets it right every time. It's a big help because my wife is always asking when the steaks will be ready as she's cooking the rest of the meal. The latest model is impervious to heat damage with the ceramic end getting too hot to touch, yet has remained intact after dozens of cooks.
I've tried many different thermometer probes and this has been the most accurate and easy to use. I also use a Fireboard when I want to manage multiple probes in a single app. I'm sure I could do it with the Combustion. but three would be out of my budget.
