I found this interesting, and maybe others will as well.

The electric oven was set to 350°. I put a Pulse into a meatloaf, and set the alarm for 165°.
Notice how the “shadow” shows the ambient temp, 1” from the meat, at about 75° to start, and then it takes about 20 minutes to get near 300°. The oven itself cycles, but the ambient shows low by about 15° throughout. (My oven cycles +/-15°.)
This is useful information. For example, if you are filling your cooker to the max (this frequently happens on a LBGE) and your ambient probe is right next to, say, a 16 lb brisket; 250° displayed is probably more like 270-275° pit temp!
