    Fireboard 2 Drive

    I’ll have to call Fireboard on this. During smoking my 11 pound brisket had temperature probes in point & flat. At 10 hours the Fireboard showed the temperatures at 170 degrees iT
    and checked iT temperatures using thermapen
    and the thermapen showed temperatures at 185 to 190. I wanted to wrap at 175 degrees max but the thermapen showed me wrapping at 185 - 190. My brisket wasn’t as moist as it should’ve been cause of the temp errors. The moisture in the brisket was low to the point it didn’t pass the bend test. A 1/4” slice setting on a finger looked like an airplane wing. I’m not sure what the problem was. Maybe the Fireboard probe was in fat. Not getting in fat is like shooting a dart in the dark.

    Do a calibration test on the probes. Setup an ice bath and a pot of boiling water. You should see 32-33° in the ice bat and 211-212° in the boiling water. Test your thermapen at same time. The couple of FB probes I’ve had go bad read way off. These went bad after getting wet or years of use.

      Boiling temperature of water will be lower in the Clovis area (4268' MSL) ... very close to 204ºF, in fact.

      MBMorgan I wondered about elevation there, part of reason I suggested testing the Thermapen too, in order to see if all probes agree.
