I’ll have to call Fireboard on this. During smoking my 11 pound brisket had temperature probes in point & flat. At 10 hours the Fireboard showed the temperatures at 170 degrees iT
and checked iT temperatures using thermapen
and the thermapen showed temperatures at 185 to 190. I wanted to wrap at 175 degrees max but the thermapen showed me wrapping at 185 - 190. My brisket wasn’t as moist as it should’ve been cause of the temp errors. The moisture in the brisket was low to the point it didn’t pass the bend test. A 1/4” slice setting on a finger looked like an airplane wing. I’m not sure what the problem was. Maybe the Fireboard probe was in fat. Not getting in fat is like shooting a dart in the dark.
