I'm getting ready to shell out for both, but I'm wondering if the placement of the rotisserie burner would be too much for the ambient side of the heater probe...

What does Meater say ambient probe can handle? I'm sure they must have specs on that. Same for Napoleon on the Infared.

I'm not sure which Napoleon you are looking at. I have the 500 Pro and the rear burner is not really infrared. It is just another burner (I think 11K) just like the ones in the main section of the grill.
As for the Meater, as long as you keep it away from being directly over or in front of any of the burners, it should be OK. the caution would also be if you get the temp up to its potential high end, somewhere close to 700+ F. I wouldn't go over 500* even indirect.
EDIT: Interesting - I looked at their brochures and they do say the rear burner is infrared. I have the Prestige Pro 500 SRIB. I will take a look later today to verify what the rear burner is. My poor brain seems to recall looking and seeing a regular burner behind the burner cover. Regardless, i still think the issue for the Meater is keeping it away from being directly over/in front any burner.
EDIT #2: Well, I just checked and mine has just a regular, single burner with just 1 row of holes even the model is SRIB (Side, Rear Infrared Burner). Shows you how often I’ve used the rotisserie!
