    Look at this beauty! (Matfer Bougeat Black Steel Pan)

    Matfer Bougeat 15 3/4" Black Steel Pan just arrived today. That's a 11 3/4" frying/sauteing surface! I use my 12" Lodge Carbon Steel Pan all the time but it's 9" cooking surface can crowd the veggies and meat too much when cooking for more than two. Can't wait to season this baby and saute away!

    Here's the dimensions as per Matfer. It's very light at 8 lbs 2 oz.

    Diameter/Height
    15 3/4”, 2 3/4”.
    Weight:8 lbs. 2 oz.
    Cooking Surface 11 3/4"

    The handle is welded on so no rivets to clean collect food particles.

                If we need something additional, I think that's the direction we'll go. We do have one as a wok. But we have so many good pots and pans, that I don't think it'll be happening anytime soon.

              That's a beauty for sure! Is the seasoning process the same as CI?

                I'm going to follow Matfer instructions for first seasoning, potato peels, oil, and salt, wipe and repeat. After that its the same. Wash with hot water, apply thin layer of oil and store.

              Just bought the same pan over Christmas. Haven’t touched it yet. Hoping it will be the sweet spot between my CI pan and my stainless. Jury is still out

                LOL! I actually had her lift it when I took it out of the box. She held it like a low swing baseball bat and was swinging it back and forth. I said, "okay now I know what pan you'll use to konk me on the head". It was her smile that gave me the chills.

              Been loving my Matfer for a while now. Food seems to just skate around in it. As for the weight, it's not really an issue as it seldom leaves my range top.
