I'll wait until she is out doing something, and then swap it into the spot on the counter where the slow cooker goes. She'll never notice the difference!

You'll like it. Rice is especially easy and good (saute it in butter before starting the pressure cycle). Risotto - especially mushroom risotto! And plenty of other things. Just about any stew - and don't ignore the short ribs. Calamari and octopus. Anything you would braise. A very versatile tool.
A good guide is Lorna Sass' "Pressure Perfect", but make sure you adjust her recipes (and variations) from 15lbs for a stovetop to 10 lbs for the Instapot electric.
Been considering one of these myself. But wife says no more kitchen appliances until the kitchen remodel is done.

I forget which one, it was a big one. When I was in college I had a stovetop pressure cooker that I absolutely loved, it was cast aluminum. I dropped it during a move and it cracked.

Congrats on your Instant Pot purchase, Mosca . When the wife asks, tell her it's great in slow cooker mode as well--comes up to temp faster than my Crock Pots and stays rock solid.
The same technique works great with frozen 1 lb packs of pulled beef, pulled pork, brisket chunks etc for making quick and delicious chili or Chile Colorado.
And hard boiled eggs are perfect every time, with the shell pulling right off in 2 halves. No more HBEs with bumpy surfaces from frustrated peeling.
