    Need immediate input, sale ends tonight:Made-In

    I'm going to buy a seasoned carbon steel fry pan from Made-In tonight. Should I go 10" or 12"? I have both 10" and 12" Lodge CI skillet and use the latter most of the time. I might also buy one of their non-stick skillets.

    If the sale is a good one, you might want to buy both. I have both 10" and 12" Misen carbon steel skillets, I use them both equally - it depends on how much I'm cooking as to which I use.

      My 2 cents: You don't have to fill up a larger pan, but you will be limited in what you can fit in a 10" pan.

            And I say buy both because I actually prefer cooking on the CS pans the more I use them.

                Just my wife and I. What would be the benefit of having both? I'm leaning towards the 12 incher.

                Sorry for not responding back, I got distracted by a great evening outback. You had asked about differences.. I think everyone should have a nice 10 inch for making omelettes, and smaller jobs , a 12 is just too big for that and an 8 inch is just too small, but when cooking for my wife and I, lots of meals end up combined in one pan, similar to a wok, and a 10 is way too small for that.

                Looking forward to your experience with them. I’m wanting a new carbon steel, and hoping for a 10 inch.

                I say get both, even if it is just you and the wife. You're bound to have company come over sooner or later, especially once they know you are a carbon steel man..

                  The reason I personally always prefer a bigger skillet to a smaller one is eggs. The larger the diameter, the thinner the layer of eggs in the pan, the easier they set up w/o overcooking the bottom. A similar principle to how a restaurant's grill is great for diner omelets, and a free standing griddle the same, the eggs can run to their end w/o restriction, making the mass thinner and easier to cook. A smaller skillet restricts them more so they're thicker and makes them a touch trickier to cook properly. If you're not a scrambled egg or omelet cooker, then you couldn't care less about this...But in that case then my argument is you can still cook 1 or 2 pork chops in a larger skillet, but you can't cook 6 in a smaller one!

                    I appreciate everyone's prompt and thorough input! I ordered both and nixed the non-stick choice.

                      I didn't realize this until I was looking at the cookware you were getting. Made In is based in Austin, Texas. There's just west of the airport!
