    Form pan question.

    Anyone use Form Pans. You know the ones with the sides that you can unclip from the base.
    I’ve been using one for several years to make cheesecake and every time, I’m getting some of the water from the larger water filled pan into the mold. Any tricks to prevent this? I’ve always used aluminum foil to wrap the cake pan. Is there anything better to use?
    Thanks for any advice.

    When I had the restaurant, I covered the bottom of the springform with a sheet of aluminum foil

    Actually, the foil goes on the outside of the pan, it just keeps the water out, sheesh!!

      That’s what I’ve always done and I still get water intrusion. Not a lot but enough to make the crust/base wettish.

    ATK found they could stop using a water bath. They used an oven thermometer to accurately bake at 250 degrees and used an instand read thermometer to be sure to remove cheesecake at at 155 degrees. This is the recipe that discusses it but you don't need to use the recipe to avoid the water bath. Easist ever cheesecake

    RonB First, Merry Christmas.
    I used that water pan thing you found on Amazon. It seems to work pretty good. There was some kind of liquidy stuff in the bottom, but I think it was just the butter that melted off from the crust. No water intrusion at all. For the $20 I would buy it again. The color might be a bit off because it’s a peanut butter cheesecake.

      Thanks for the review. I always have a little butter leak out of the pan.

      Great lookin' cheesecake too.
