I ran across while looking for a griddle for the PK300. They look pretty good and would be a very good fit for the PK’s 22x14 surface area. The carbon steel is obviously quite nice.

I'm not sure they are the same steel. The cheaper one says 1/8 inch steel and the other says 10 gauge which is slightly larger than 1/8, and the former lists a total weight and the latter doesn't. Not sure why the difference.
I’m not sure I like their reasoning. $100 a pop does not fall into the category of ‘throw-away’ for me. But at only 10ga, it is a throw-away. Sounds like they are telling us what’s going to happen. 🤔
At this price burn it up, warp or damage it beyond use and buy another one.
I like the look of it and all, but my concern is the (lack of) thickness. Personally I’d rather get a cast iron griddle for two reasons:
1. It won’t warp
2. it has thermal mass
I am a fan of carbon steel though, that’s what my indoor frying pan is made of.
I looked for both cast iron and carbon steel but all of the cast iron ones I found were smaller and I am really looking for full coverage or as close as I can get for the PK300.
A friend that has a machine shop says cast iron is fairly easy to cut, so I guess the question is do you mind losing some of the edges? You’d lose some of the grease catching capability, but lots of stainless griddles are just flat chunks anyway.
Sorry, that was pretty vague. I meant that just about any machine shop can cut it for you. My friend will do it gratis, but he’s in Barrington and you might find a better option down there.
