      I love Oxo stuff, but I kinda wish they had this without the long handle, i.e. with two "helper style" handles. To me that would be better for grilling. I have been thinking of one of those grill baskets, but have decided I don't want a stainless steel one - something more like this in carbon steel will be much more non-stick.

      Maybe something like this would serve me better, for grill use:

        RonB having had the stainless grill baskets, is sticking an issue with those, compared to your new carbon steel grill pan?

        I like the handle if you are going to stir fry on the grill for sure.

        jfmorris - the difference is night and day, or maybe the Pope and Panhead John. I had to spend 10 to 15 minutes just to scrape most of the stuck bits on the ss pan, and remember, since there are holes, I had to scrape both the inside and outside. I think there were two little spots stuck on with the OXO pan, and they came off with a slight bit of rubbing.

        RonB thanks for telling me that - I will resist all temptation for a stainless grill basket! I had some in my Amazon wish list, removing them.

        I went diving into my BBQ toy shelf and found two holey grilling pans, one with a detachable handle and one similar to this OXO one. Not shiny stainless steel, but with some sort of nonstick coating or maybe carbon steel? Used them both last night. Burned my hand on the handle of one of them, and have the scars to prove it. Luckily it's my left hand.

        Both pans had only a few spots that needed to be gently scrubbed before going into the dishwasher. Both pans came out of the dishwasher with a few small rust spots. Arrrgh! Rust! I hate the stuff on cookware and cooking utensils. I'm going to use them for a while (no more trips to the dishwasher) until they start to annoy me with the rust. Then I'll toss them and get this one, which is hand wash only, and treat it better.

        I have to say it was nice to have 2 pans with veggies on the gasser while the pork chops were reverse searing. Two is always better than one.

        RonB , are you reseasoning this pan after each use like we do with our carbon steel woks?

          Yes - It gets stored it in a plastic chest outside so I am erring on the side of caution. It doesn't look like it needs reseasoning, but it won't hurt.

          I like to marinate proteins for a while and that greatly increases the chance of something sticking and burning. If you sauce everything after the cook, you should be OK even with SS.
