    Looking for a LARGE skillet for induction - no cast iron.

    Wifey wants something new.

    No cast iron - too heavy, especially for large ones. She doesn't prefer the stainless we have.


    Skillet or sauté pan - I think truly vertical sides would be best, as it maximizes flat bottom area.

    13-14" ideally.

    Non-stick. She's not hot on the idea of carbon steel (I'ma get me one of these for the fun of it, but this is separate). Would be good to be dishwasher friendly, but not imperative.

    A lid is a bonus.

    Induction use, as above.

    Under $100? She thinks spending big money on GOOD cookware is kind of a waste. I see somewhat where she is coming from, we had a set we loved for like... I dunno, 14 years, we paid about $200 for the whole set from Sam's (I think) but it wasn't induction-friendly, so now it's sitting out in the garage. The idea for this skillet/sauté pan came from that set, it has a 12.5" with a helper handle that really comes in handy when you have family visiting, you can do a good dozen chicken thighs or something in it. And she says she doesn't care too much about the lid, but I know she would prefer it, she uses it alot for braising and that kind of thing.

    I can go a little over $100, but every dollar is going to be another eye-roll. Doesn't have to be top-notch All-Clad, but needs to have some decent quality.

    Help me out, Pitmasters.



    Oh, and I need it this week. lol Family arrives on Sunday, 5 days from now.

      That's a good one. I'd like a tiny bit larger, but it will certainly check most of the boxes. No lid, but not a deal-breaker.

    Try the 6 qt Rondeau from Misen. I absolutely love mine. Can go from induction cooker directly to oven, too. Has a lid. $115 but you can get 20% off as first-time buyer.

      In addition to the cook top space considerations, those side handles, given how heavy the pan can become depending on how full of food, will be appreciated for not punishing arthritic wrists/hands that you or she may get to "enjoy" when you reach your golden years.

      Jim thanks, I just looked at that non-stick rondeau, but it's only 11". Not quite as large as we'd like. I'll keep it in mind. Looks nice, though.

      Interesting on the diameter. I can sure fit a lot of stuff in my 6 qt rondeau. A full pound of pasta with sauce and a pound or so of meat is no problem in this thing. I'd think a dozen thighs would be no challenge and they could be sauced in there, too.

    I mean, is carbon steel better at 'non-stick' than cast iron? I think my cast iron skillets are fairly well-seasoned, but she definitely doesn't like the heft and she says they're not 'non-stick'. I think they're pretty close, but not completely. And you're not supposed to cook tomato sauce-based dishes in cast iron, I think - is carbon steel the same way?


    I think I'm going to get myself a large carbon steel skillet or paella type pan to play with, so we'll see, I suppose.


    But she is pretty set in her ways when it comes to cooking, and I've tried to win her over to cast iron and tried to encourage her to try carbon steel - but she likes the true non-stick coating for things like eggs and such.


    And I still need to get a decent square griddle pan for her to cook bacon on. <sigh> <edit> Flat square pan, not with raised griddle ridges. </edit>


    Cookware adds up...

      Greenpan makes some great non-stick, induction friendly pans. Here's one well under your dollar limit:

        That's a good looking one, too, just a hair over 12". That seems to be the sweet spot for most cookware - not a ton of these over 13", unless you go with carbon steel or something.

        Says it's aluminum, along with FAQ says not induction compatible, otherwise a nice looking pan.

      14" with lid, $60. Not the highest quality for sure, but ticks all your boxes.

        Wow, it does! I haven't ever ordered from Wayfair, but that might be a good option. I'm skeptical of the Gotham steel claims, but then, this isn't going to be a daily-use kind of skillet, so it might be worth trying out. For $60 it sure does check all the boxes!
