      I like to fry in an old tractor disk over a live fire.... marvelous results.

        That's pretty cool. I do paella in a very similar fashion and it's one of my favorite cooks.

        I do also…. But rainy weather in the wilderness doesn’t always allow a fire…

        I love live fire cooking and you have a nice setup!

      WOW, folks! Just WOW!

      I thought someone would have needed an alternate fuel source that didn't involve normal resources…

      I advise a Scout leader, who already knows more than I did at her age… so the reason for this question was two-fold… 1. To answer her questions… 2. For my own use, as I have two drums buried deep in the woods with fish/hunt camp provisions…

      We keep most everything we need stashed there… we only need to pack in replacement commodities… Fuel is one… oil, another…

      Charcoal deep frying had never been needed but could have been used due to limited dry wood in the rainy season… Besides, a chimney will keep coals off a damp ground…

      Now I have my answers, and if anyone needs to know how to use a half chimney of KBB to fry a small onion to flavor the oil, then fry two batches of Idaho potato fries, remember this post and I’ll fill you in how to replicate what I did…

      Oh! And have enough hot charcoal to fry the trout afterwards!

        That is a little different than what I imagined from your original question. I had a vision of actually setting the DO directly on the chimney, which would be a very sketchy thing to do. It all makes sense now, and I do something similar for paella as well.

      I did this test in my pit… and used the small chimney and #8 DO, for convenience…

      I will not hesitate to use a large chimney and #10 Griswold for larger servings…

      The Scouts will hang their DO on a tripod as texastweeter does, with an adjustable hook or chain and hook where a chimney can fit appropriately to provide the heat…

      We’ll use rebar and rocks in the backwoods…

        The rebar and rocks are probably actually more stable. Fried many a bluegill in a Dutch oven or deep skillet over a campfire.

        I agree texastweeter … I’ll check the Scout gear to make sure it can adjust down near the chimney, where the chimney itself will prevent the DO from tipping far enough to spill when loading and removing food…

        Fish straight from cool water to hot oil is hard to beat…

      You could hang a pully off a tree branch and run a wire through it to the Dutch Oven so you could raise and lower it over the chimney to mimic the action of a Santa Maria grill.

        Many times, we’re under a tarp, where much apparatus isn’t applicable, but definitely that is an option in good weather…

        The fire pit has a campfire set, but again, in inclement weather, we’re not using it…

        In good weather we will suspend the DO… in bad weather, we’ll support it….

        But the charcoal chimney is definitely a option we’ll have from now on…

        Also, I saw regulating the amount of charcoal was too easy, eliminating the need for the Santa Maria style adjustment…. Suspension offers greater chance of spilling oil vs. stable supports…

      Also, do you folks keep an emergency kit in your vehicle?
      It’s the season to have a well stocked box in your vehicle…
      Charcoal and a chimney stay in my box…
      Now I may keep a DO and a pint of oil there too…

        I do. It gets pretty disorganized sometime. It's a medium sized storage tub and various non-emergency things make it in there, but there's some first aid stuff, water proof matches, space blankets, fire starter, flash light, water purification and some tools and such, and probably some stuff I'm not thinking of.
