I like to roast chicken in these grill pans. It lets the juices settle under the bird and you dont get a soggy bottom.
I am not a fan of the grill marks idea, I would rather have a nice even sear across the surface of the meat. These pans to have their place though, more so for roasting, IMHO.

I use a similar very heavy duty pan outside over a gas burner for burger patties. When the fat has pooled in the pan I move it to allow the fat to catch flame and let the burgers flame grill. Gives them a great taste.
The pan is not easy cleaning.
Haven't used it in a long while 'coz smash burgers rule now.
