    Grill Grates for Weber Genesis

    Been thinking about getting a set of Grill Grates for my Genesis. The existing grates are fine, but looking to get a better sear and better smoking capabilities than the crappy "cast iron box thingie" that I have now.

    When I try to do a reverse sear now, it takes too long to get the grill from "cooking" to "searing". My steaks are left going "um.....hello?" If I understand the Grill Grates correctly, I could cook over low on one side of the grill and crank the burner under the grill grates.

    Also, it wood (heh) be nice to be able to add a little smoke to gas grilled foods, but the lame-ass "cast iron" (Chinesium) thing I have now doesn't work worth a damn (even if I hit the wood chips with a propane torch).

    Is there any reason I wouldn't want to go with Grill Grates all the way across?

    Can I flip them upside down to grill veggies and stuff?

    I've tried GrillGrates on both the Genesis and the PK and I'm not impressed. I get big black grill marks with no sear between no matter how long I let them heat up. If I leave the steak or burger on long enough to get a sear in between the meat is overcooked. That's with a reverse sear, maybe things would be different if I cooked totally hot on the GrillGrates.

    1) If you crank the burner under the GrillGrates while you're trying to do a reverse sear all you'll end up with is a hot grill and well-done steaks.

    2) For smoke, just wrap some dry wood chips in foil and poke a few holes in it with a knife, put it on a hot burner and you're done. I'm not sure what(if anything) this has to do with GrillGrates.

    3) If you like grill marks and impossible-to-clean grates go for it. It's your money.

      TwoWheeler it sounds to me like what you really need is a charcoal grill. The best sear is from direct radiant heat from nuclear hot charcoal.

      That said, I like GrillGrates for searing when they are upside down and this works well on a gas grill. I LOVE them for cooking chicken. They really help lock in the juices.

      I put Grill Grates all the way across my Genesis and cooked on them for a year. They worked just fine that way. But then I visited the Grill Grates site and the guy who invented them strongly recommended that they only be put part way across to allow for better convection cooking of the food. So I took two of the five grates off, cut one of the original Weber grates to fill the gaps and I must say that I like it much better. It allows for better heat throughout the grill. And by cutting the original weber grates into two pieces the same size as the Grill Grates, I can have the open grill on either side with the Grill Grates in the middle or put them to one side and have the Grill Grates on either the left or right. I put them to the left with the sear burner so there are three burners beneath the Grill Grates. With that setup you can get some serious searing done. Well over 600 degrees.

      That being said I recently purchased a Weber kettle with a slow-n-sear and I much prefer the taste of steaks cooked over charcoal. A little more work but well worth the effort. You can't have too many outdoor cookers!

        One question would be if there is any difference between the sear temp with 3 GG over the three burners instead of putting the 5 GG with all the burners. Maybe the heat was "inside" and it built up a bit more the temperature...

        The edge of the grill grate gets VERY hot from the convection current. It's weird, but I put stuff right on the grate, at the edge of one of my two panels, and it is like a jet blast of convection heat.

      David Parrish. You've just given me an idea. I have a Weber tabletop charcoal grill. Maybe I'll play with a small, hot fire in that for searing.....

      Do it!!! You will love it. I use a Lodge Camp stove whenever I do the reverse sear. It works amazing. Best steaks ever. The timing can be tricky, because you want that small grill to be blazin'

          I have 4 GG's on my Weber Genesis Silver B. I only use the gasser for hot quick cooks like thin steaks. I use the rig below for Reverse Sear. #1 is not a fan of grill marks, so I turn the GG's upside down. This setup was not used for a Reverse Sear though.

          For a Reverse Sear, I cook the steaks directly on the kettle grate until they're up to temp, then throw the GG's over the SnS and sear away. Best steaks ever!

            I have GGs on my 20 year old Genesis Silver B but it has the 3 burners going side to side which is almost impossible to setup a good 2 zone. If you have front to back burners you can disconnect the grill grate sections to prevent heat transfer and get a good 2 zone setup. I will often reverse sear my steaks and burgers starting out on charcoal kettle at 225 then I have my Genesis gas cranked up to warp 10 with GGs upside down waiting for sear action.

            Like someone else said they do give big old black grill marks you can combat this 2 ways. #1 keep turning the steak every 10 seconds or so. Meathead calls this his turntable method. Or #2 flip upside down and use the back side.

            I have found that some other benefits are they definitely seem to make the grill cook hotter, presumably because of the infrared heat? They do warm up quickly, and they even out the heat. My old Silver B used to be way hotter on the right side, not so much now with the GGs.

            Cooking veggies is absolutely amazing on the grill grates. They are really non-stick once seasoned. The flipper tool works well. I cook peppers, onions, etc. I even cooked a fresh made quinoa burger and was easy to flip and didn't fall apart. I think cooking veggies on the GGs is actually one of my favorite uses. (Am I allowed to say that here?!)

            Here's some veggies I recently cooked and the NEW GG Griddle I just got. I'm hoping this will be even better for searing. I will hopefully get to cook some nice burgers or steaks soon and try it out.

              I have the same rig. The IR reports 786 degrees after the Weber has preheated with all 3 burners on high. Last weekend did burgs and dogs with the lid up after the preheat. All done within 6-8 minutes.

              I use this as well and like it. Yes, you can achieve the same with aluminum foil but the pouch is more convenient and is reusable. I've been using mine about a year and it's holding up well.





              Interesting comments on grill grates. I had wondered the same thing, if it would just give a very narrow dark "grill mark" which is not what I want. I was hoping it could replicate something more akin to an infra red grill.

                  A question about GrillGrates. I see lots of people using the flat side for loose veg and burgers, but does anyone use them to get an even brown sear on the whole steak post reverse sear?

                  I purchased the gg for the same gas grill. I like it a lot. Goes all the way across. What I like is you can flip it over if needed. I also love my mo pouches for gas. Nothing better when you wanna cook some smoke fast after a hard days work. One of mh pics he puts smoke pellets in the valley of the grill grates and I tried it with some wood chips. Didn't like that to much cause of the mess. So I decided with the smoke pouches. I got two of em. Also I found if you want good flavor try using lump charcoal. I think it burns hotter faster and has a better taste than reg charcoal. But with that said, as for being on a gas grill, the ggs and mo smoke does wonders. I also like the gg cause they are easy to transport and take camping and you can put em over any fire.
