Thanks for paging me Kathryn fzxdoc - I think I must have unsubscribed from the Grillgrates emails in a recent fit of trying to stop the hundreds of junk emails in my inbox every day, figuring I didn't need any more Grillgrates. I just resubscribed so that I can keep an eye out for sales for folks like Attjack here.
Attjack - the seconds sales sometimes include the full replacement sets, but often are just individual panels, but STEEPLY discounted. Like 1/4 or 1/3 of the normal cost. I got a set for my dad's Spirit 300 series grill by buying the panels on sale, then I think I needed to buy ONE gap filler panel at full price. Still a big savings.
I *think* your Spirit is a 3 burner, so this is the set:
GrillGrates are the ultimate upgrade to your Weber Spirit 300 series and older Genesis*. GrillGrates even out the hot and cool spots and tame flare ups.
But what the set consists of is this:- Set Includes: (4) 17.375” GrillGrate panels and (1) 17.375” Gap Panel
I recommend subscribing yourself to their email list, and watch for a big sale before you buy anything. They have them often enough to where it won't be more than a month or two.

And yeah - the Grillgrate panels are "grate" for rental crap grills, or even those crappy park charcoal grills you see on pedestals out in old parks that still have them. If your panels are too deep for the grill, you just gotta turn them sideways and run them that way. I've found my 18.8 inch panels off the Genesis won't fit front to back on a lot of other grills, but I can usually fit maybe 3 panels locked together and turned sideways.

Unfortunately, sizes are very limited at the moment. 19.5" is available, but you could trim them in a chop saw or miter saw with a carbide blade, then file any burrs off.

Unless you need to do eggs or pancakes on your PK300, I would pass and go with Grillgrates instead. The holes let the charcoal fire breathe, and let you get rid of excess grease when smashing burgers. I've got two of the Grillgrate griddle panels here for my gasser, but mostly use them as defrosting plates instead, as I wasn't overwhelmed with their performance as a griddle... smash burgers didn't sear as well as on the regular grill grate flats because the grease had nowhere to go...

Attjack the seams of the griddle sections interlock, and are slightly raised, so I don't think a sauce is going through them. But they also separate each panel into its own griddle, since you can't do anything seamlessly with your spatula across griddle sections.

STEbbq unlike many here, I actually find Grillgrates useful on charcoal grills - as on my kettle, it allows me to do a full grill direct grilling setup (1 zone) without worrying about flareups and burning the crap out of everything during a big burger or chicken cook. I don't tend to use it as much as I used to because of other cookers, but have posted many cook pictures from my kettle where I had chicken going on a full set of Grillgrate panels, with 4 split birds or a ton of leg quarters on the rail side, and I've flipped burgers on the flat side. So if you want to get more grilling use out of your PK300, I see some value in them.
So here is what the full set for the PK300 consists of:
GrillGrates for the All New PK Classic 300 and Aaron Franklin edition by GrillGrate: the ultimate upgrade for your grill. Get better, juicier food with GrillGrates!
It is two custom cut 13.75" panels with the corners angled off to let it clear the rounded corner of the grill, and a special "3 rail" gap panel, also 13.75" deep, that I didn't know existed. The normal gap panel is 2 rails. I see no way other than as part of that special set for the PK300 to get that special gap panel.
So while sometimes sets go on clearance, and you may luck up and see the PK300 one as a seconds sale, most of the sales I see are individual panels in various sizes. And I am wondering if they will do that anymore, since they seem to have a special seconds sale section on the website all the time now... Anyway, you could buy bigger panels and cut them down yourself if you have access to saws. I've actually cut the corners off a grill grate panel using the carbide blade in my miter saw, going slowly through the aluminum. You could do cuts with a jigsaw or other saw with a metal cutting blade as well, if you are good at following a line. A buddy of mine bought a set of clearance panels and custom cut his for his gasser, using his miter saw to lop them off as they were too long, and I think he split a panel lengthwise to get it to fill the space on his gasser, since he didn't get a gap panel.

Do they sell griddle panel seconds the depth you need? 13.75"? If so, that is a cheap thing to try compared to the full perforated set of grillgrates for your grill. I still think the regular grillgrates let the charcoal breath, but unless they go on clearance, the griddle panels as seconds are a better deal, and would do the kind of tasks you are talking about. A couple of those would likely fit, and have some room on both ends of the grill for the fire to breath.
