    What It Takes To Run a Top BBQ Joint……Truth BBQ Houston, Tx.

    Back in 2015 Leonard Botello opened Truth BBQ in nearby Brenham, Tx., armed with a used Klose pit. Two years later in 2017, Texas Monthly awarded him a #10 ranking in that year’s Top 50 In Texas issue. In 2019 he opened a second location in the Houston Heights area. Two years later in 2021 his Houston location is awarded the #3 ranking in Texas Monthly’s Top 50 list…..they do the list every 4 years. We have a local restauranteur and James Beard Award winner named Chris Shephard who’s very well known locally and in foodie circles nationwide. He’s branched out and does a YouTube and TV show called “Eat Like A Local”, on our local NBC affiliate. Here’s his interview with Leonard Botello along with some great food and action scenes. The amount of work and food knowledge it takes to successfully do this …..takes a special person IMO. One interesting fact…when he first opened he was averaging about 3 briskets per day, he now averages around 110! Video is 22 minutes long but well worth the time. If we do another Houston MeatUp we can definitely add this to our list.

    Included in the video is another Houston favorite, Gatlin’s BBQ. Highly regarded locally and state wide! Don’t miss this one, the burger shots alone are worth it!

      Amazing starting with 3 briskets per day to 110! That’s inspiring!

        Can you imagine 110 briskets a day? He’s worked himself into a full time job. With that volume keeping the quality up is incredible. As anyone who’s ever owned a business knows you have to be there and a part of the team. He’s dedicated and smart.
