    Terry Black’s Dallas Review

We are in Dallas this week for the VEX robotics world championship cheering on my son’s team. I figured this was a once-in-a lifetime opportunity to get my family some Texas BBQ. We took at look at the top 50 list from Texas Monthly and Terry Black’s was the only place open late enough (we arrived at 7:30pm) for our needs.

Short answer : it is pretty good.

it was pretty awesome to see the smokers, plus the cutter (what skill!) , and interesting to see the warming ovens set to 145 or 155 that they would pull meat from to serve.

We ordered brisket, turkey, original sausage, beef rib, Mac & cheese, potato salad, and a pecan tart. With drinks, total damage was $137. They threw in the sticker for free.

Brisket and beef rib: the star of the show. Peppery, great bark, and incredible flavor. 10/10.

Turkey: outstanding. Moist, flavorful and tender. Hard to imagine a better turkey but flavor is not as good as brisket/beef rib. 9/10.

Sausage: A good sausage but meh on flavor. 7/10.

    Mac & cheese: Forgettable. 6/10.

Pecan tart: TBD. Saved for a snack later!

Potato salad was also good per my wife.

We also had three sauces (original, spicy, and sweet). The original was excellent and so good we bought a bottle to take home. The others were forgettable. Very slight sweet taste but also super savory. My next project is to figure out how to reverse engineer it. Any recommendations?

Great write up and excellent pics! Thanks for taking the time to do this. Glad you enjoyed the Texas Q, mostly. I wish I could also make some of the BBQ sauce I had recently at 1775 Texas BBQ. It was awesome, and I wasn’t the only one who thought so. I also bought some to take home, it was that good. Here’s what it looked like, was yours similar? It was a thin, slightly vinegary and peppery taste…..

possibly a 50/50 mix of NC bbq sauce and KC style? Or maybe even just a thickened NC style sauce?

I will take a pic of the bottle later Panhead John . It was definitely thin and I know the first ingredient was ketchup. However, Amanda who doesn’t like sweet KC style sauce loved it. it was like "crack" in her words.

I have been to TX a bunch of times for my job and hit up Cooper’s in Austin a few years back which was good. However, it is very unlikely my family will be back so I was happy to get them some good TX BBQ. And we really loved it all. The vibe in the place was great and it was a blast.

I am trying to remember this other place I went to a few years back that was probably in Houston or Dallas. It was a big name and they did let you order BBQ sauces online for home delivery. I remember that because TSA took my bottle and dumped it in the trash because I couldn’t check the bag for the way home. Sigh. The place will come to me soon.

Drinks were about $17 and I gave a $17 tip.

Net food cost would be closer to $103.
