I decided to do a brisket over the weekend. I have no questions but just gratitude for the Texas Brisket recipe! I started off with a Costco Prime brisket that was ~11.5 lbs. This was their smallest one and only cost $2.99/lb. After trimming a whole bunch of fat off it went into fridge overnight for a dry brine. I had it in for about 10-11 hours. Pulled out rinsed and put on Big Bad Beef Rub. I used Ancho powder and Chipotle powder for the spice. I put BBBR on pretty thick as you can see both sides. I also injected some beef broth into it.

I warmed up the Traeger Select Elite to 225. I used the gourmet blend pellets from Costco. I then used the same pellets in my A-MAZE-N-TUBE-SMOKER 6". I have the small one from when i had my traeger Junior Elite 20. The tube will smoke for about an hour at most. I refilled it once so it was used for 2 hours. Since its a pellet grill they don't have as much smoke as other smokers so for this i wanted extra smoke.

This is what it looked like at a bit over 5 hours. It reached 151 at this point. It hit stall probably 20 or 30 minutes before this. At this point I foil wrapped (crutch) it. I put just a small amount of beef broth maybe a couple Oz at most around side before wrapping. I put it back in and let it cook. I cooked it til the remote thermometer read 203. I spot checked with instant read and it was 203 with the thinner spots up to 206 i think. I pulled it off. The cook started at 5AM and I pulled it out of the smoker at 3PM.

This is it right off the grill. There was so much juice in the foil it dripped out all over the place! All over smoker and in between. I pulled it out and saved the juice and placed in new foil wrap and threw it in cooler. It stayed there til ready to eat 3 hours later. Friends brought Potato Salad and I made up some Corn Bread.
It looked absolutely fantastic!!! The smell and the taste was unreal
! This was my best cook and I am extremely critical of my cooks. I loved it. The quality of the meat (prime) had a lot to do with it in my opinion. It had quite a hot bite to it though. I had one person that was a bit sensitive to that flavor. Maybe next time a bit less chili than what recipe says
