        Great show again! Just a nit to pick! I think it is important to differentiate "resting" a steak or turkey or something cooked to a temp of 165 or less, and "holding" a butt or brisket cooked to 200F or more. The things that happen in these meats is VERY different. I discuss this in detail here: http://amazingribs.com/tips_and_tech...ting_meat.html
