    Venison sausage

    My neighbour has some deer meat in the freezer from last year so I told him I could make jerky and or sausages from it. As it turned out I made about 3# of pepper jerky which I smoked it on my Traeger and it turned out good. I also made about 9# of hot Italian sausage and my question is can this be frozen again or should it be cooked first?

    You can refreeze it. I do this all the time

      We freeze some every year without smoking. That way it can be added "fresh" into gumbo.

        I just turned in some frozen from last year for processing, got some fresh Polish back, and it's now frozen. Done this many times, won't be a problem.

          The idea that you can't safely thaw, then refreeze meat is an old wives tail. One that I still can't convince my old wife is not true. :-)

            To bad his helper never got a taste of the jerky! Even though his helper did all the work.... guess I have to assume the jerky was good.
