Has anyone got a standard recipe for a bison burger? I was thinking standard burger recipe but bison is super lean. Anyone been battle tested on this one?

I actually really like bison, I buy the ground meat all the time. You hit the nail on the head, it's real lean. I have brisket fat trimmings I add to it, or you can even mix with some 80/20 beef. Either way they cook up like regular beef burgers for me.

I jus treat em same same as chuck burgers, or 85/15 hb; I dredge em in a ~1/16" Worcestershire bath, then grind/pat Montreal on both sides...
SnP workys jus fine, same same...
I then unceremoniously plop em on my cooker, an proceed...
I eat a lot of bison; (We grow em here!)
Helps me keep them pesky extra pounds off...
I don't wanna haveta buy new bibbers; my ~20 yr old ones is jus gittin broked in, where I like em, cept fer my Sunday ones...they's kinda stiff, like, still...Last edited by Mr. Bones; June 10, 2018, 05:27 PM.
