    Howdy, yall!

    Been plumb dang overrun with life, lately, ain't had much chance to post up some food, etc.

    Lemme edit these pics fer size, on th fly, an I'll git some posted out to yall...

    Okay, so...

    1 lb. 80/20 Ground chuck, SPGO,some store brand taco seasonin mix, red pepper, Texas Pete, an we have a basic filler mixture, fer either tacos, or burritos...

    Truth be told, it's even way better with some chopped onions, bell peppers, hot peppers of yer choice sweated in, but this was a simple, easy, expeditious weeknight meal.

    ProTip:

    Quit drainin th grease from yer ground beef/chuck/sausage.

    Mr. Bones you nailed Taco Tuesday at my house. Keep it simple 80/20 with package taco seasoning (Costco has bulk seasoning). Look for the orange sauce and fill taco Top of with raw onion, picante, Salsa Verdi and cheese and you got a taco to die for or with, it doesn't matter. It's just plain decadent.

      Yup, I lean heavily towards practical, cookin wise...

      There are certainly ways to create incredible, phenomenal, unforgettable, even heirloom, passed down receipts from simple, available, everyday things...

      Reckon that's where my fancy lies...

      Sometimes we over analyze, recreate and loose the soul of a meal. Paula Dean comes to mind as watching her and butter. That once in a while over the top decadent meal filled with so much goodness may cut our lives by 1 minute or hour. Personally, I don't care and live my life to the fullest, enjoying the people and food with a certain amount of moderation.
      P.S. Just lost my mom 92 yrs. My G-mas 89 and 87 awhile back.. All 3 had a bacon grease container on the stove and used it heavily.

    Alright! Any leftover steak in our house becomes part of a taco or burrito the next day. I now find I’m leaving more steak on the plate so I can have it again next day wrapped in a soft tortilla.

      Once my tortillas were warmed up (Sorry, HouseHomey ) in el horno de microondas, I added some reheated taco mix, an copious amounts of sharp cheddar to em... also, in a icebox cleanin mode, some habanero salsa.+ more SPGO, before rollin towards th finish line...

          Well, it jus wouldn't be a proper soft taco, or burrito, without some fillins, fer my tortilla, now would it?

          I started with some Beef Mixture, in a valiant effort to cover th tabula rasa that is a warm tortilla...

          Notice how usin a larrupin big spoon allows th Orange Stuff to be transported to its penultimate destination.

          Fork ain't gonna cut it, at all, fer this step, yall...

          Notice how, in both shots, th shredded sharp cheddar is seemin kinda lonesome, an possibly even a bit jealous?

          Well, now, I don't want no disharmony, or acrimony, here in my kitchen, so long bout now, I tapped Ol Ched on th shoulder, jus tagged him right on in, at this point...

          He seemed ready, willin, able, even eager, an more than equal to th onerous task, to hand...

                Beautimas! Now, one of the many things I really hate about having CRS is I forgot all about my jar of salsa verde and Herdez Taqueria Roja! Them thar hot pepper's is too much for me. All I had was green chilis but am holding onto them for when we do Korzo's "The Slav" burgers. I wants mine to be green chili slav, you no for the multinational cuisine.
