    Sous Vide in Cryo pack?

    Is there any problem SVing a beef tongue in it's cryo from the packing plant? Planning on 158x36. Or should I just play it safe and foods saver it?

    Yes. There is a problem.

    Cryo isnt rated for SV temps. There’s no way to know if it will maintain seals for 36 hours at that temp.

    Always rebag.

    Lemme just +1 this.

    I've actually done some long sous vide sessions in the original bags. This worked okay until a bag split with two pork butts in it. This was a shorter cook and at higher temps than I usually sous vide at but... it happened. It sucks too, especially when it happens while you're sleeping.
