I'm going to try offering baby back ribs at our local farmers market. My plan is to use MHMD, smoke on my pellet grill till they pass the bend test, and then rapid chill them in an ice bath and vacuum seal them and freeze. I'll take them out of the freezer the day before the market and thaw in fridge. At the market I'll have them in a sous vide tub at 140 F. When somebody orders them I'll tell them they'll be ready in 10 minutes and throw them on my pellet grill and hit them with a honey/jalapeño glaze a few times. Any suggestions on how I could possibly improve the process?
