I decided to try the candied pecans for Christmas since I was going to be smoking some rib tips. The pecans are smoky and flavorful, but soft and not crunchy at all - too much like raw pecans. I'm not crazy about raw pecans, but I really like roasted pecans. I'm going to try this again, but before mixing them with the egg whites and seasonings I will roast them in the oven and see if that makes a difference, They sure are good, though.

A brief roast -- something like 325 to 350F for 10-12 minutes -- will very likely get them crisp enough for you. At least that's what I've learned from other folks who have been kind enough to share their perspectives. See https://pitmaster.amazingribs.com/fo...oked-nuts-help

Oy, Ahumadora, I feel for you. I have created some embarassing kitchen failures over the years. If you ask my Mister about "lemon chicken" he'll tell you a story! It wasn't funny at the time, but we laugh now. Cooking isn't everyone's thing. My Mister says his mom was a terrible cook, because her mom and aunties were wonderful in the kitchen. She never tried very hard because there was too much competition. With a husband with stellar BBQ skills, might a spouse feel a wee bit intimidated?
