    1 can black beans

    1 can corn

    1 red onion diced

    1 can rotel with the green chilies

    minced garlic to taste

    lots of cilantro

    fresh squeezed lime juice (about 2 )

    salt n pepper to taste

    mix all together and serve cold with tortilla chips (i like the scoops tortillas)

    best after leaving in fridge over night

                  I made some tonight and we liked it, I don’t care for raw onions so I left them out, my wife said it would be better with them in. We may have to make two batches next time.

                      I might try this without the onions. I like them, but they don't like me, and I'll just leave it at that.

                        I got this from my mom who has been making this since I was a kid however she adds just enough Italian dressing to get everything wet. Super simple and always a hit.
