    Pellet Envy dip

    I just made up the name, but Sherry Grey (Rod's wife) introduced me to this wonderful mixture. Serve with corn chips, the scoop kind work very well.

    1 can black beans (washed and drained)
    1 can shoepeg corn (yes, must be shoepeg!) also washed and drained
    2-3 green onions chopped
    1/4 red bell pepper chopped
    jalepeno (optional) chopped
    cheddar cheese in 1/2" dice
    Cilantro, remove big stems and chop

    Dressing:

    Tuscan Italian
    1/2 lime squeezed

    Mix everything together. This tastes even better the next day.

    Last batch I made, I used Sam's Choice Cilantro Lime dressing. It is good.

    Just learnt what shoepeg corn is and cant recall ever seeing it this part of the world. Would you quick blitz the ingredients or just mix together for a chunky dip.

      Kathryn fzxdoc to those in Oconomowoc, listed this in a post when I did the creamed spinach. This sounds amazing. When I first looked up the shoe peg corn I almost ordered the bait from Cabela’s. Be careful.

        It's crazy to me that I've spent my entire life in the south, and until today, did not know what shoe-peg corn was. I probably ate it as a kid, but since I didn't do the cooking, didn't know it was a thing.

          I've made this several times since the original post. Delicious IMO. A good side dish.

                I thought Texas caviar was with black eye peas, not black beans!

                Trust me CandySueQ you’re more of an authority than I am on the matter. My mom got my Texas caviar recipe out of a high school fundraiser cookbook in northern MN and it has black eyed peas AND black beans. We wouldn’t know the difference
