    Made a tasty little salsa last night

    I used only my ripe Indigo Apple, Indigo Rose, Indigo Kumquat and Indigo Blue Beauty tomatoes, a red onion since I had a partially used one in the fridge then all the typical salsa add ins.

    First bite was delicious. A couple hours after chilling was delicious but a bit sweet (I assume from the tomatoes). After sitting over night the flavors blended more and it went back to tasting as delicious as the first bite.

    i grew the entire Indigo collection of tomatoes and wasn't really impressed with them until now. They do make a fantastic salsa. Think I'm gonna be making a huge batch for freezing for when the winds of winter kick in.

      Glad yer patience paid off...
      Patience prob'ly th' most important ingredient in cookin'
      So, I cook chili, jambalaya, etc., fer like 2-3-4 days
      If ya' put too much in, early on, it's wrecked, later...
      I try to let stuff mingle...see what it's about, occasionally

      Longest thing I cook is beef or bison bone broth. That is usually on the stove top for at least 3 days and frequently longer because I simmer some of it down enough to dehydrate it into dry bullion.

      When done, I can crush knuckle bones in my hands they are so depleted.

      Both bone broths sounds scrumptious, loves me some bison, here... how do I order quart Mason jars?

      I make salsa every few days when the tomatoes are in. Just before they get too ripe I chop them and add Jalapeños. onion, garlic, lime juice and salt. It goes great on just about everything except ice cream. And that may just be because I haven't found the right flavor.
