Note bene: The author doesn't specifically mention that American cheese (including Velveeta and the like) contains sodium citrate.

I use to keep sodium citrate on hand but then ran out so I often sneak a little bit of American cheese in with other cheeses when making cheese dishes when I want them creamery. The other cheeses always mask the American.

BTW, you can also use citric acid (a.k.a. sour salt) in place of the sodium citrate.
