I use Meat Heads fancified cheese pimento cheese.

I split jalapeños in half and get rid of all the seeds. I put homemade pimento cheese and cocktail weenie inside and wrap with bacon. Pretty darn simple and amazing.
I smoke on the Big Green Egg on indirect heat around 275 with pecan chunks until it looks done.
