    Beetroot salsa

    Beetroot salsa

    2 bbq'd beetroots. Tinfoiled put directly on the coals. Salt, oil and balsamic vinegar in the tinfoil. Peel before bake.
    2 bbq'd chillies - de-skinned and de-seeded
    1 bbq'd (tinfoiled on the coals) and pickled (1-2-3 pickle sauce) red onion. Bake with skin on - skin will burn, remove all burned bits before pickling.
    1/2 handful of coriander
    Salt
    Juice from 1 juicy lime
    6-8 bbq'd cherry tomatoes, pips and juice squeezed out

    All finely chopped and mixed

    1-2-3 pickling juice = 1 part vinegar, 2 parts sugar, 3 parts water. I normally add some salt too.
