Wow! That looks phenomenal! The mushrooms look chopped? Was going to ask if you made a type duxelles with them for this, but I don’t believe so from the pic.
Thanks! Yeah, I fried the bacon and then cooked the chopped mushrooms in the same pan, deglazed with the wine I was drinking, added parsley, and finished it with butter. Then I butterflied the tenderloin, spread the herbed goat cheese and the mushroom mixture on, then rolled it up. Finally, I wrapped it in prosciutto. The flavors were very good together.

He's smoking some pork butts tomorrow and we're heading over for dinner. He wanted to borrow my Franklin BBQ book and i suggested he take the Meathead book as well. Nice to have another smoker in the family.
