    Favorite Meyer Lemon uses

    So my Meyer Lemon tree has gone berserk with fruit. What is your favorite recipes/uses for lemons? Thanks in advance Crew. I know I can always count on you!

          Meyer lemons are sooo good. I buy a bag when they're in season, squeeze them, and freeze the juice in 2 TBL portions using an ice cube tray. That's about 1/2 a lemon.

          Lemon bars. Here's my mother's recipe which is very sweet --

          Crust
          1 cup butter (8 oz / 226 g)
          2 1/2 cups flour (11 oz / 312 g)
          1/4 cup sugar (1.8 oz / 50 g)
          Cut all ingredients together to make a crumbly mixture. (Can use a food processor to do this.)
          Pat into an even layer over the bottom of a 9 x 13 inch pan. Bake 20 minutes at 350 F / 180 C.
          Topping
          2/3 cup fresh lemon juice (5.4 oz / 152 g)
          6 eggs
          3 cup sugar (21 oz / 600 g)
          2/3 cup flour (3 oz / 84 g)
          1 tsp baking powder
          Blend topping ingredients until well mixed. Pour topping over the prebaked hot crust.
          Bake 25 minutes more at 350 F / 180 C. Cool and sprinkle with powdered sugar (optional).

          There are recipes with less sugar and I especially like the ones where the lemon curd is cooked before pouring it over the crust. Here's an example --

            Ummm, when Life gives ya Lemons...
            Make Lemonade!

            I'd prob squeeze lotsa juice, an freeze, same with pulp, an even zest, vac-sealed...

            Lemon isn't native, here, an can be rather pricey, even fer substandard, ho-hum, run of th mill, so if I had a good source of really good lemons, yup, I'd go to alla that trouble, have me a stash of 'Th Good Stuff'...

              ComfortablyNumb, mebbe that's jus what it is, an I'm misrememberin...mosta my lemons didn't require casts, though a few notable ones did...

              Unlike me, at least yer brain remained uncompromised; my physical injuries were like a gnat landin on me, by comparison, but I still spend a whole lotta time, tryin to rebuild th Ol Place...

              Fool's Errand, I reckon, but I'm either too dang stubborn, or too dang stupid to give up.

              Likely, some o both...

              I'm not sure it was a bag of lemons that life just handed you, ComfortablyNumb. Something much worse was in that bag.
