Filleted two mackerel, dry brined briefly with salt/sugar, marinated briefly with a Dijon/lemon juice/black pepper mixture. Per this recipe https://www.thespruceeats.com/hot-sm...recipe-1808944. Sorta. Then onto the kettle/SNS with just a touch of post oak. Next time I’ll cut back on the lemon, but overall, with a great pasta and broccoli side, it made a nice meal.
