    Salmon on the PBC or Weber Kettle???

    i am cooking some salmon for a friend on Christmas Day. Does anyone have any recipes or suggestions?

    I can use either my PBC or my Dad’s Kettle.

    ColonialDawg has a GREAT recipe for smoked salmon on the PBC, I’ve made it a few times:

      I've never done it on PBC. I use my kettle with the baskets on each side with the salmon up the middle.

        I also am planning on doing some salmon this winter break, as I have yet to BBQ some.

        One recipe I want to try are Steven Raichlen's Salmon Candy: https://barbecuebible.com/recipe/salmon-candy-2/ There is a video of him doing this in epsiode 205 of Project Smoke (and he uses the PBC!): https://www.pbs.org/video/steven-rai...-getss-smoked/ (Salmon Candy starts at 18:22.)

        One the less-sweet side, I've thought about doing is Malcom Reed's cedar planked salmon: https://howtobbqright.com/2013/06/28...rilled-salmon/ (He uses his BBQ rub, but any well-balanced rub would work.)

          If it's thin salmon, I use the kettle. High heat, quick, yum. If it's thick to where I want to "smoke" it, that's a different story.

            If you are smoking it, either one works.

              For a thicker fillet I usually sear both sides on the weber then move it off to indirect heat and add a few chunks of wood for a light smoke. 10-15 minutes does it.
