Tuna is a great way to economize your meal budget. It's a lean fish product (get the kind with water) and relatively inexpensive.
I'm a bachelor and often have to throw out unused food, and it breaks my heart everytime. Unfinished milk, loaves of bread, chips/cereal etc. that I buy tend to go bad before I can finish them off.
I recently bought a value pack of eggs (36 count) and the expiration date was quickly approaching. I saw a jug of vinegar and hot sauce in my cabinet, and had the idea to pickle the remaining eggs. The acids in the vinegar and salts in the hot sauce do a great job of preventing bacterial growth in foods that are submerged in these acidic liquids.
I also own a neat little egg boiler. Boils 6 eggs at a time with a minimal amount of water. Not really any clean-up hassle after using it also!
I boiled the remaining eggs and meanwhile mixed up a pickling juice.
Nothing fancy, just a simple half and half mixture of white vinegar and hot sauce, and 2 small bottles of garlic sauce.
I think this was a winning idea! I solved the problem of the expired eggs, I now have something to snack on (munching on the pickled eggs from time to time) and lastly spicing up my tuna salad. (Using pickled eggs in the salad)
