Just the other day we were talking sous vide on here and someone mentioned scallops. (@EdF maybe?) Anyway, walking into the grocery store today, sale on scallops. Must be a sign. So, in the hot tub time machine for 30 minutes, then a fast sear in cast iron. I fully intended to grill these, but I thought they were a little small and decided the stove would be easier. I don't have GrillGrates (yet).
They were really good.
EdF very much so. There may have been one or two that were in the pan 10 seconds too long, which made the outer edge a bit chewy, but most were just right.

What temperature did you use? I just saw the Anova newsletter recommended 123F.
Coincidentally, my local grocer had a "Truckload Sale" yesterday where I picked up scallops also (along with four CAB Choice Packer Briskets @$2.66/lb and a cryopack of two pork [email protected]/lb)!
