Very difficult. We, grandpa and I, smoke them with some success. But it's tricky and un-reliable at this point. Anyone have a super repeatable smoked trout recipe?
It's not just rainbow, we get brookies, browns, cut-throat, lake, etc.
Super fishy fish. Most of our effort is in descaling small fish. A keep-able trout for us is about 1lb.
I've look at gravalax, not tried yet. I think the solution is a dry rub, long low temperature smoke, and attempt the Salmon thing: safe, raw, tasty, dad-gummit.
