This one calls for roasting the garlic first, then blending with butter and firming back up in the refrigerator.

You know it EdF The roasting mellows the garlic and gives it a sweetness.

I do that too, and freeze it in ice cube trays. Always have a dollop of roasted garlic butter available to plop on a steak, chop or a baked potatoe!

Funny, I just got done watching Guga Foods, a sub channel from the SV Everything channel, where he made garlic butter. Gotta try this!!

Spinaker I actually confit the garlic in butter. Once it's a little caramelized, I fish out the garlic, mash it with a little salt, whip it with fresh soft butter and a little lemon juice and some herbs. Form a log.
Keep the butter that cooked the garlic for other applications.
