    I always marinate my chicken thighs. I want to try a rub.

    Seems like Simon and Garfunkel is the main Meathead chicken rub? Or should I try something else? What happens if you use Memphis Dust on thighs and cook them slow?

    I use Memphis Dust on mine but I do not cook them low and slow as that doesn't get the skin crispy enough for my taste. That being said, if you are doing skin-less, go for it with the low and slow and I'm sure they will turn out great!

      Yeah they're skinless. I cook a couple pounds nearly every week for lunches. I like to eat a salad with protein every day. At least on the weekdays.

    I like S&G a lot. I also like Weber's Roasted Garlic and Herb seasoning, and for a little zing, Weber Kickin Chicken rubs. I never use MMD on chicken, but I don't like sweet chicken. Some people do like that though.

      I use my Cajun seasonin', most often...
      Mrs. Dash is actually pretty dang good, as well, fer store bought...
      Lemon pepper makes fer some great yardbird...
      Jamaican jerk seasonin is a fave, as well
      Jus' a few ideas to get ya' started...

        I decided to hold off on the chicken until tomorrow (pizza on the blackstone tonight). So that means I have time to try more than one rub. So that's what I'll do. Thanks for the guidance, gents.
