This has worked pretty well for me:
      • 2 1/2 tablespoons fine ground black pepper
      • 1 tablespoon onion powder
      • 1 tablespoon garlic powder
      • 1 tablespoon Lawry’s seasoning salt
      • 2 tablespoons mild New Mexico style chili powder
      • 1 to 2 tablespoons chipotle or cayenne powder

      Adapted from recipe found at:

Chicken wings are typically not a traditional smoked meat due to the popularity of frying chicken wings and coating them in a buffalo sauce.

my fave is just salt... a nice dry brine, then franks/butter/garlic - perfection

I like Bad Byron’s Butt Rub - it’s a sugar free somewhat spicy rub that is good on pork and chicken.

The first time I decided to smoke wings after finding this awesome web site I wasn't up to making Simon and Garfunkel rub just yet. I wanted to dry brine and went to the grocery to look for some similar rub without sodium. The only one I found was Mrs Dash in various flavors. I've used the original and garlic herb. They are very tasty and everyone loved it more than once. I did have occasions where the seasoning burned while crisping the skin on th direct side. The seasoning is a little coarse. I'm thinking I might try to make it a little finer in the future.

Plain old salt and pepper works wonders if you can get them crisp.

Kosmos has a variety of good wing dusts and they are on sale right now.
